First, you have to boil a kettle. Then, because the steel brew head will steal all the heat from your water, you have to pre-heat the brew cylinder over the kettle steam. While that's happening, you grind your beans, prep the puck, assemble the scorching hot metal components using rubber grips, pour in the boiling water, and push down on the lever. And if you want a milk drink? Too bad. The Flair doesn't steam milk. You'll need to buy a separate standalone frother.

You are going to love this stupid thing.

Because you are the pump, you have absolute, total control over the pressure profiling. You can do a gentle 2-bar pre-infusion for 15 seconds, ramp up to 9 bars for the main extraction, and slowly taper off to 6 bars at the end to prevent bitterness. You simply cannot do this on an electric machine under £2,000, yet here you are doing it on a £150 piece of metal.

When you get the grind size and the pressure curve exactly right, the Flair produces thick, syrupy, café-quality espresso that will genuinely shock you.
